  • ½ teaspoon salt
  • 1¼ cups low-fat Greek yogurt (10.5 oz / 300 grams)
  • 3 teaspoons mild curry powder
  • 2 large cloves garlic (grated or minced)
  • ⅔ teaspoon salt
  • ½ teaspoon black pepper
  • 12 oz cherry tomatoes, halved (350 grams)
  • 2 Lebanese cucumbers (sliced)
  • ½ red onion (cut into quarters and thinly sliced)
  • ⅓ cup fresh mint leaves
  • ⅓ cup fresh cilantro (coriander leaves)
  • 1 teaspoon sumac (can be omitted)
  • 1.5 teaspoons sugar
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Juice of 1 lime
  • 2 cups cooked couscous (I used packets instant couscous, cooked as per packet instructions)
  • 1 cup canned chickpeas, rinsed and drained (about 150 grams / 5-6 oz )
  • 2 tsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
