  • 1 cup shredded Monterey Jack cheese, divided
  • 1/2 teaspoon fine salt, to taste
  • Freshly ground black pepper, to taste
  • 8 whole wheat tortillas (about 8 inches in diameter)
  • Handful of chopped cilantro, for garnishing
