- 50 ml water
- 3 egg whites
- 300 g of unsalted butter (at room temperature, and cut into cubes)
- 60 g of 70% cocoa chocolate cut into pea sized pieces
- CHOCOLATE GANACHE
- 125 ml whipping cream
- 1 1/2 tbs of golden syrup
- 175 g of 70% cocoa chocolate (cut into pea sized pieces)
- 1/2 tsp of vanilla extract
- 40 g of unsalted butter (cut into cubes)
