  • 1 pound of tomatoes, cut in half or quartered if large (romas are nice but small tomatoes will do)
  • 1 small onion, cut in 1/2 inch wedges
  • 4 garlic cloves, leave unpeeled
  • 2-4 jalapeno peppers or serrano peppers (I like 2 of each), deseeded and cut in half -or leave whole
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 teaspoon apple cider vinegar
  • 1/2 cup fresh cilantro, stems and leaves
  • 2 tablespoons olive oil
