  • 1 lb boneless, skinless chicken breasts (see Notes below for using pre-cooked chicken)*
  • 1 small white or yellow onion, finely diced (about 1 cup)
  • 1 small jalapeño, minced**
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 (14-ounce) can no-salt-added crushed tomatoes
  • 1 (15-ounce) can no-salt-added black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 teaspoons chili powder
  • 1 ½ teaspoons ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon fine salt
  • ¾ cup chopped fresh cilantro leaves
  • Juice of 1 lime
  • Optional for serving: Diced or sliced avocado, sour cream, lime wedges, fresh cilantro leaves
