  • 1 (28-ounce) can crushed tomatoes
  • 6 cups low-sodium chicken stock or broth
  • 1 bay leaf
  • Salt and pepper
  • 1 (15-ounce) can cannellini or great northern beans (drained and rinsed)
  • 1 cup small pasta (like ditalini or small shells or elbow macaroni, uncooked)
  • 8 to 10 ounces chopped (fresh baby spinach leaves (optional))
  • 2 tablespoons pesto (storebought or homemade (see note))
  • Freshly grated Parmesan cheese (for serving)
