  • 1/4 cup roasted pumpkin puree (canned may be used)
  • 2-3 tablespoons champagne vinegar or to taste
  • 6 tablespoons olive oil
  • kosher salt (to taste)
  • freshly ground black pepper (to taste)
  • 10 ounces mixed greens
  • 3 ounces goat cheese (crumbled)
  • 1/4 blanched almonds
  • 3 tablespoons chopped sundried tomatoes (not packed in any liquids)
  • 3 tablespoons roasted and salted pepitas
