  • 4 chicken thighs (skinless)
  • Salt and pepper (to taste)
  • 1/2 medium onion (diced (about 1/2 cup))
  • 1- inch piece of fresh ginger (grated (about 1 tbsp))
  • 3 cloves garlic (finely diced or minced (about 1 tbsp))
  • 1/2 tablespoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground chilli
  • 2 bay leaves

  • 400 g crushed tomatoes (1.5 cups or 1 can tinned tomatoes)
  • 1/4 cup water
  • 2.5 tablespoons cashew butter (1/4 cup sunflower butter in the original recipe, but I didn't have any)
  • 1/4 teaspoon vanilla extract
