  • 1 cup celery (finely chopped (2-3 medium stalks))
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon fresh rosemary (finely chopped)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 8 cups day-old good bread (cubed in about 1/2 inch pieces)
  • 2-3 cups low-sodium chicken broth (see notes)
  • 1 cup milk of choice (I use skim)
  • 2 large eggs (beaten)
