  • 1 tablespoon olive oil
  • 1 medium onion (finely diced)
  • 2 medium carrot (diced)
  • 2 sticks celery (thinly sliced)
  • 2 cloves garlic (grated or crushed)
  • 400 g tin chopped tomatoes
  • 400 ml chicken stock ((from a cube is fine, I used 1 x Kallo Organic Chicken Stock Cube))
  • 2 dried bay leaves
  • Salt and pepper (to taste (see Note 1))
  • 400 g tin green or brown lentils (drained)
  • 300 g cooked turkey (chopped into bitesize pieces (see Note 2 for what to do if using fresh turkey))
  • Fresh parsley for garnish ((optional))
