  • 1 pound boneless skinless chicken thighs (cut into bite-sized pieces)
  • 6 ounces oyster, shiitake, or straw mushrooms (sliced)
  • 2 13.5-ounce cans full-fat coconut milk
  • 2 tablespoons fish sauce (or to taste)
  • 2 teaspoons palm sugar or light brown sugar
  • Salt to taste
  • Juice of 2 limes (about 2 tablespoons)
  • For garnish. Fresh chopped cilantro, chopped green onion, optional sliced chilies for extra heat
