- ½ cup plain unsweetened Greek yogurt (I use Kite Hill to keep it dairy-free)
- ½ teaspoon garlic powder (or 1 garlic clove minced)
- 3 tablespoons lemon juice (from ~ ½ lemon)
- 2 tablespoons chopped fresh dill
- pinch of salt & pepper
- ½ cup diced cherry tomatoes
- ½ cup diced cucumber (peeled and seeded)
- ¼ cup pitted and diced Kalamata olives
- ¼ cup crumbled feta cheese (I used Violife feta to keep it dairy-free)
- 2 tablespoons chopped fresh parsley
- pita chips, crackers, sliced carrots or bell peppers (for serving)
