  • ½ teaspoon garlic powder (or 1 garlic clove minced)
  • 3 tablespoons lemon juice (from ~ ½ lemon)
  • 2 tablespoons chopped fresh dill
  • pinch of salt & pepper
  • ½ cup diced cherry tomatoes
  • ½ cup diced cucumber (peeled and seeded)
  • ¼ cup pitted and diced Kalamata olives
  • ¼ cup crumbled feta cheese (I used Violife feta to keep it dairy-free)
  • 2 tablespoons chopped fresh parsley
  • pita chips, crackers, sliced carrots or bell peppers (for serving)
