  • 2 (14 oz) cans cans low-sodium chicken broth
  • 1 lb yellow potatoes, (diced into cubes about 3/4-inch)
  • Salt and freshly ground black pepper
  • 2 medium ripe Roma tomatoes, (seeded and diced (1 cup))
  • 2 cups shredded cooked chicken ((I used rotisserie chicken))
  • 1/3 cup chopped fresh cilantro
  • 1/3 cup chopped green onions
  • 1 Tbsp fresh lime juice, (then more to taste)
