  • 1 Tbsp butter
  • 1 large yellow onion (diced)
  • 2 poblano peppers (diced)
  • 1 jalapeno pepper (minced)
  • 4-5 cloves garlic (minced)
  • 3 Tbsp tomato paste
  • 1 Tbsp packed light brown sugar
  • 8 oz can tomato sauce
  • 1 chipotle pepper in adobo sauce (minced - see recipe notes)
  • 4 cups reduced sodium beef broth
  • 1 cup water
  • 2 bay leaves
