  • 1 shallot, finely minced
  • 8 boneless, skinless chicken thighs ((roughly 1 1/2 lbs))
  • pinch of kosher salt
  • 1 1/2 cups cucumber, chopped ((I used mini seedless cucumbers))
  • 1 1/2 cups cherry/gold tomatoes, sliced in half
  • 1/3 - 1/2 cup fresh parsley, chopped
  • 3 Tbsp fresh mint, chopped
  • 1 Tbsp lemon juice
  • 1 tsp extra virgin olive oil
  • 1/4 tsp kosher salt
  • black pepper, to taste
  • 2 cups cooked tricolor quinoa ((or equivalent amount of another grain - rice, couscous, bulgur, etc))
