  • 1/2 teaspoon Chinese 5 spice
  • 1/3 cup cocktail peanuts
  • peanut oil or vegetable oil
  • 1 onion (sliced 1/4" thick from stem to root)
  • 1 red bell pepper (sliced ¼” thick)
  • 1 yellow bell pepper (sliced ¼” thick)
  • 15 whole Thai dried red chilies (*see Notes for substitutions)
  • seeds from 5-10 Thai dried red chilies (optional for spicier – see Notes)
  • 1 tablespoon minced ginger
  • 4 medium cloves garlic (minced)
