serves 6- 1.5 lbs boneless skinless chicken thighs (or breasts, cut into 2" pieces)
- Sea salt and pepper
- 2 Tbsp coconut oil
- 1 20 oz can pineapple chunks in 100% juice (fruit and juice separated (see below))

- 1 inch fresh ginger (minced)
