  • Chopped fresh cilantro or parsley (for garnish)
  • 2 Tablespoons cornstarch
  • 2 Tablespoons cold water
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 teaspoon kosher salt (a bit less if using fine salt and less if using salted butter)
  • 1/4 teaspoon ground black pepper
  • 1 cup yellow cornmeal
  • 3 Tablespoons unsalted butter
