  • 1/4 teaspoon cayenne pepper (optional and to taste)
  • about 1 1/4 pounds boneless skinless chicken breasts (diced into bite-sized pieces and seasoned with salt and pepper)
  • 1 1/2 to 2 cups 2 heaping handfuls fresh spinach leaves , sliced thinly (chiffonade)
  • 1 large red bell pepper (seeded and diced small)
  • 1 large orange bell pepper (seeded and diced small)
