- 3/4 cup barbecue sauce, divided
- 1/2 red onion, chopped
- 1 red bell pepper, chopped

- 2 tablespoons diced green chilies from 4 oz. can
- 3-4 garlic cloves, minced
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/4 cup flour
- 1 1/2 cups low sodium chicken broth
- 1 1/2 cups low-fat milk
- 1 1/2 tablespoons dry ranch dressing seasoning mix
- 1 tsp EACH salt, ground mustard, chili powder
- 1/2 tsp EACH ground cumin, smoked paprika, dried oregano
- 1/4 teaspoon pepper
- 1/4 teaspoon chipotle pepper ((optional for more heat))
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup sour cream or Greek yogurt ((more or less to taste))
- Hot sauce to taste
