  • 3 Tablespoons Tamari (or soy sauce, I use low sodium Tamari)
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons brown sugar
  • 2 garlic cloves (minced)
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1 1/2 cups dry jasmine rice
  • 1 1/2 teaspoon Kosher salt (divided)
  • teaspoons avocado oil (divided)
  • 1 English cucumber (large, thinly sliced)
  • 2 teaspoons rice vinegar
  • 1 cup frozen shelled edamame (defrosted according to package directions)
  • 2 avocados (ripe, sliced)
  • 1 mango (large, ripe, diced into cubes)
  • 2 scallions (/ green onion - thinly sliced (dark green parts only))
  • 1 Tablespoon sesame seeds
  • 1/2 cup light mayonnaise (or your fav mayo, I used Bhurman's Light from Aldi)
  • 1 Tablespoon sriracha
  • 1 teaspoon honey
  • 1 teaspoon toasted sesame oil
  • 1 teaspoons Tamari (or soy sauce, I used low sodium Tamari)
