- 1 ham hock
- 14 ounces smoked Andouille sausage (sliced into thin bite-sized pieces**)
- three 15-ounce cans red beans (drained and rinsed***)
- 3 cups reduced sodium chicken broth (plus more if desired)
- 1 teaspoon Worcestershire sauce
- 1 or 2 bay leaves
- 2 to 3 tablespoons fresh flat-leaf parsley (finely minced; for garnishing)
- 3 cups cooked white rice (or as desired)
- Pickled okra (optional for serving)
