  • 3 medium/large carrots (peeled and grated)
  • 1/2 cup roasted corn (use fresh corn, frozen corn that's been thawed, or canned corn that's been drained)
  • 1/2 cup fresh cilantro (finely minced)
  • 2 tablespoons pickled jalapenos (finely minced)
  • 2 tablespoons pickled jalapenos brine
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon salt (or to taste)
  • 1/2 of a medium/large red onion (peeled and sliced thin)
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons white vinegar
  • 3 tablespoons water
  • 1 tablespoon granulated sugar
  • 1 to 2 teaspoon salt
