  • ¼ cup (60ml) red wine vinegar
  • ½ pint cherry tomatoes, (halved, about 1 cup halved tomatoes)
  • 1 mini cucumber, (halved lengthwise, then thinly sliced )
  • 2 oz feta cheese, (crumbled)
  • ⅓ cup (50g) Kalamata olives, (pitted and halved)
  • 2 Tbsp extra virgin olive oil
  • ½ tsp Kosher salt
  • Freshly ground black pepper
