  • 1 (14-ounce) can reduced sodium chickpeas (rinsed and drained)
  • 8 ounces feta cheese (crumbled (about 1 1/2 cups))
  • 2/3 cup pitted Kalamata olives (leave whole)
  • 1 cup chopped fresh basil
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar (plus a few splashes to taste)
  • 1 small garlic clove (grated or finely minced)
  • 2 teaspoons Dijon mustard
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground black pepper
