  • 1 cup orange juice (225 ml or juice of about 3 medium oranges)
  • ⅓ cup maple syrup (plus 1 tablespoon)
  • ⅓ cup orange marmalade (smooth is best)
  • 3 tablespoons bourbon (I used Jim Beam, or whiskey)
  • ½ teaspoon mixed spice
  • ¼ teaspoon ground clove
  • 1 tablespoon Worcestershire sauce
  • 3 teaspoons brown sugar (heaped; white sugar works as well)
  • 2-3 oranges (sliced)
  • A little olive oil for pan-frying orange slices
  • Rosemary twigs
