serves 12- 2 cups blanched almond flour ((240 g))
- ½ cup shredded coconut
- 2 tablespoons sugar-free granulated sweetener
- 1.5 teaspoon vanilla extract
- ⅓ cup melted butter (or coconut oil)
- ¼ teaspoon salt
- 3 teaspoons unflavoured gelatin powder ()
- 1.5 tablespoons boiling water
- 1.5 cups strawberries (sliced)
- 17 oz cream cheese (about 500 grams, can be light cream cheese)
- ½ cup sugar-free sweetener (e.g Stevia or Monk Fruit)
- 2 teaspoons vanilla extract
- 300 ml heavy cream (whipped first)
- To finish: Strawberries to decorate; you can make an extra strawberry puree to drizzle on top.
- I used an 8-inch baking pan for the cheesecake.
