  • 1 tablespoon Japanese rice wine (or dry sherry (see notes in post))
  • 1 tablespoon Asian chili sauce or Sriracha (more or less to taste)
  • 1 1/2 teaspoons toasted sesame oil
  • 1/4 tsp EACH salt, pepper (plus more to taste)
  • 4-6 cloves garlic ( minced)
  • 1 tablespoon minced ginger
  • 8 oz. cremini mushrooms (sliced 1/4-1/2” thick)
  • 1 cup THINLY sliced carrots
  • 1/4 cup chopped green onions (white parts only)
  • 1 8 oz. can bamboo shoots (well drained)
  • 1 8 oz. can sliced water chestnuts (well drained)
  • 4 oz. (1 heaping cup) snow peas (ends trimmed)
  • 1/2 cup roasted salted peanuts or cashews
