  • 8 ounce can of tomato sauce
  • 2 teaspoons olive oil
  • 1 onion (diced)
  • 2 carrots (peeled and chopped into 1/4 pieces)
  • 1 zucchini (chopped into 1/2 pieces)
  • 1 15 ounce can of black beans (drained and rinsed)
  • 1 cup frozen corn
  • salt and pepper to taste
  • 2 teaspoons chili powder
  • Garnishes: chopped cilantro, tortilla strips, sour cream, shredded cheese, diced tomatoes, lime wedges, avocado
