  • 1/2 cup pitted green olives (roughly chopped if desired)
  • 1/4 cup thinly sliced shallot
  • 1 cup asparagus (chopped into 1-inch segments; blanched and chilled in an ice bath (green beans are a good sub))
  • 1/4 cup mint leaves (freshly torn or minced)
  • 1/4 cup hazelnuts (roughly chopped; toasted if desired in a dry skillet (sliced almonds are a great substitution))
