  • 1 tablespoon tomato puree
  • 650 ml boiling water
  • 600 g chicken breast (diced)
  • Salt and pepper (to taste)
  • 1 tablespoon olive oil ((or oil from the sundried tomatoes))
  • 4 cloves garlic (grated or crushed)
  • 250 g orzo ((I use Napolina))
  • 100 g sundried tomatoes in oil (drained and sliced (See Note 1))
  • 1 teaspoon dried oregano
  • 100 g baby spinach
  • 100 ml double cream
  • 25 g parmesan (grated (plus extra for serving))
  • 1 tablespoon fresh basil (chopped (plus extra for garnish))
  • A side salad or green vegetable (optional)
