serves 8- For the Fruit -
- 2 cups fresh cubed pineapple - I used about half a pineapple
- 1/2 lb fresh strawberries (halved)
- 3/4 cup fresh blueberries
- 2 mandarin oranges (peeled and sectioned)
- For the Dressing -
- 1 tbsp fresh squeezed lemon juice
- 1 tbsp fresh squeezed lime juice
- 2 tsp pure maple syrup
- * 1/4 tsp vanilla - optional - it will give the fruit more of a "creamsicle" flavor.
