  • 2 cups fresh cubed pineapple - I used about half a pineapple
  • 1/2 lb fresh strawberries (halved)
  • 3/4 cup fresh blueberries
  • 2 mandarin oranges (peeled and sectioned)
  • For the Dressing -
  • 1 tbsp fresh squeezed lemon juice
  • 1 tbsp fresh squeezed lime juice
  • 2 tsp pure maple syrup
  • * 1/4 tsp vanilla - optional - it will give the fruit more of a "creamsicle" flavor.
