- 1 cup mini mozzarella balls (bocconcini, halved)
- ½ cup green Sicilian olives (sliced)
- ½ cup sliced fire-roasted red pepper
- ⅓ cup thinly sliced pepperoncini (or Greek golden peppers)
- ¼ small red onion (finely diced)
- 1.5 cups canned chickpeas (drained)
- ⅓ to ½ cup grated Parmesan cheese (optional but delicious)
