serves 6- 1 (14.5 oz) can fire roasted salsa style diced tomatoes
- 2 bell peppers, cut into 1/2 inch strips (I used 2 red bell peppers but you can also use green peppers, yellow peppers or orange peppers or a combination)
- 1 Tbsp taco seasoning
- 1 yellow onion, cut into thin, half moon slices
- 1 Tbsp fresh lime juice
- 1/2 cup water or chicken broth (JUST for the Instant Pot not for the slow cooker version)
- 1 1/2 lbs thin cut pork loin sirloin chops, cut into half inch strips
- For serving: tortillas, grated cheddar, sour cream, guacamole, etc.
