serves 8- 2 1/2 lbs potatoes (Yukon gold, red, or any thin-skinned) ( OR use 5 cups leftover mashed potatoes, with curry powder)
- 4 tablespoons, ghee, butter, vegan butter ( ghee tastes the BEST)
- 1/2 cup plain yogurt (or sour cream)
- 1/2 cup milk(or nut milk), half and half or heavy cream
- 1 teaspoon salt, more to taste
- 1/2 teaspoon pepper
- 1-2 teaspoons yellow curry powder, more to taste
- 2 1/2 cups cooked lentils ( 3/4 cup -1 cup dry)
- 2 tablespoons ghee, or olive oil
- 1 large onion, diced
- 4 cloves garlic, rough chopped
- 2 cups diced carrot, (2-3 carrots)
- 2 cups diced celery ( 2-3 ribs)
- 2 teaspoons garam masala, more to taste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 teaspoons dried fenugreek leaves
- 1 cup veggie broth
- 1 cup frozen peas ( or corn, or green beans- or use fresh)
- 2 tablespoon ghee or olive oil
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 3 tablespoons flour (or gf flour)
- 1 1/4 cups warm veggie broth
