  • 2 large carrots (chopped into chunks)
  • 2 stalks celery (chopped into chunks)
  • 1 medium sized onion (roughly chopped (you can use the paper and skin))
  • 3 garlic cloves (smashed (you can use the paper))
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh oregano
  • 10-12 cups water
  • ½-1 tablespoon kosher salt
