- 5 lbs ripe tomatoes (I used a mixture of grape, plum, Roma and beefsteak varieties)
- 1 cup onions (diced)
- 5 large cloves garlic (minced)
- 1 cup warm water ((Could also use chicken or vegetable broth))
- 2 tablespoons fresh oregano (chopped)
- 2 tablespoons fresh parsley (chopped)
- 2 tablespoons basil (chopped)
- 1 tablespoon thyme
- 2 tablespoons brown sugar
- salt and pepper (to taste )
- ½ cup red wine (I used Cabernet (Use a great tasting wine that you'd drink.))
