  • 2 green onions, white and green parts thinly sliced
  • 3 tablespoons sliced or slivered almonds, toasted
  • ¼ cup chopped fresh cilantro leaves
  • 2 tablespoons chopped fresh mint leaves (may substitute parsley)
  • Fine salt and black pepper
  • Arugula for serving
