  • 2 bay leaves
  • 3/4 cup tri-colored quinoa (see note 1)
  • 1 (15-ounce) can Great Northern white beans (drained and rinsed)
  • 1 cup frozen corn
  • 1/2 cup frozen peas
  • 1/2 cup diced zucchini (see note 2)
  • 2 cups coarsely chopped baby spinach
  • 1 lemon
  • 1 tablespoon fresh parsley (optional)
  • Parmesan cheese (optional)
