serves 2- 170 g (5oz) tuna (drained. I always use tuna in oil but tuna in brine is lower in calories.)
- ½ avocado
- 4 tbsp herbs (I used fresh basil and chives but oregano, dill or parsley will also be delicious.)
- 1 tbsp greek yogurt
- 1 jalapeño
- 1-2 tsp lemon juice/lime juice
- salt and black pepper (to taste)
- 4 slices bread of your choice
- 1 cup greens (rocket/arugula, baby spinach, watercress or lettuce.)
- cucumber (sliced )
