  • 2 large onions, (chopped)
  • 4 large carrots, (peeled and chopped)
  • 1 ½ lbs. new potatoes, quartered ((or use russet potatoes, peeled and chopped into 3/4-inch cubes))
  • 8 ounces sliced fresh mushrooms
  • 2 tablespoons chopped fresh parsley, (plus extra for garnish)
