  • 2 romaine hearts, (chopped)
  • 1 lb. cooked large shrimp, (peeled and deveined)
  • 1 cup crumbled feta cheese
  • 1 English seedless cucumber, (halved lengthwise and thinly sliced (or 2-3 mini cucumbers sliced))
  • 1 pint cherry or grape tomatoes, (halved)
  • ¾ cup pitted kalamata olives
  • ½ of a small red onion, (thinly sliced)
  • Kosher salt and ground black pepper, (to taste)
  • Optional garnish: pepperoncini
  • Optional, for serving: pita bread, hummus, tzatziki sauce
