Beef birria is a Mexican stew of tender, slow-cooked beef in a rich tomato and chili broth flavored with cumin, cinnamon, and oregano. The meat becomes meltingly soft and absorbs the complex spice flavors. Serve with warm tortillas for dipping or as a base for other dishes.
