  • 1 large yellow onion, chopped ((about 2 cups))
  • 3 large carrots, peeled and chopped into bite-size pieces
  • 1 stalk celery, chopped
  • 2 (16 ounce) cans beans, drained and rinsed ((such as pinto beans or cannellini beans))
  • 8 ounces sliced fresh mushrooms
  • Kosher salt and ground black pepper, to taste
