  • 2 large onions, (chopped)
  • 4 large carrots, (peeled and chopped (or about 5-6 medium carrots))
  • 3 russet potatoes, (peeled and chopped into ¾-inch cubes)
  • 8 ounces sliced fresh mushrooms
  • Optional garnish: chopped fresh parsley or thyme
