  • 1/2 cucumber (seeds removed, sliced into thin strips)
  • 2 tbsp fresh mint (finely chopped)
  • 2 tbsp Thai basil (finely chopped)
  • 2 tbsp fresh coriander (cilantro, finely chopped)
  • 1 avocado (sliced (or add more if preferred))
