  • 1 cup cherry or grape tomatoes (halved crosswise)
  • ½ cup thinly sliced red onion
  • 4 oz. crumbled Roquefort blue cheese (feta also works)
  • 2 tbsp chopped chives
  • kosher salt and freshly ground pepper (to taste)
