  • 1 egg white
  • 1/3 cup granulated sugar
  • 1/3 cup red wine vinegar ((don't substitute!))
  • 1/3 cup water
  • 3 tablespoons pineapple juice
  • 3 tablespoons ketchup
  • 2½ tablespoons honey
  • 1 tablespoon reduced sodium soy sauce
  • 1/4 tsp EACH salt, red pepper flakes
  • 1 TBSP + 1 tsp cornstarch
  • 1 tablespoon neutral oil
  • 3 garlic cloves, (minced)
  • 2 teaspoons freshly grated ginger
  • 1/2 yellow onion, ( chopped into 1-inch chunks)
  • 2 cups chopped pineapple (or 1 15 oz. can pineapple tidbits in juice, drained (juice reserved for sauce))
  • 1 green bell pepper, (chopped into 1-inch chunks)
  • 1 red bell pepper, (chopped into 1-inch chunks)
