  • 1 large onion (or 2 small) (peeled and finely chopped)

  • 2 tbsp mild curry powder ((go hotter if you prefer curry powder))

  • 2 medium sweet potatoes ((around 450g altogether) peeled and chopped into 2cm chunks)

  • 2 x 400 g (2 x 14 oz) chopped tomatoes
  • 2 tbsp tomato puree ((paste for US))
  • 1 x 400 g (1 x 14 oz) full-fat coconut milk
  • 60 g (2 packed cups) baby spinach
