  • 480 ml (2 cups) chicken or vegetable stock
  • 400 g (14 oz) can chopped tomatoes
  • 1 large sweet potato (or 2 medium ones, (roughly 400g/14oz in total), peeled and chopped into bite-size chunks)
  • 110 g (1 cup) roughly chopped peanuts
